I hike adams a couple times a year. Its a very nice and easy hike. Miss the old water fall though, it was great.

I've been up Waterfall Canyon a bunch of times and I find it to be a fairly easy hike. I don't take my dogs, because the loose rocks will cut up their pads, but for people it is simple.
Adams Canyon in Kaysville is my favorite around here, it is a little more difficult, but still not killer. I took my entire family up there last summer and aside from the sand switch backs at the beginning my 3 year old hiked 99% of it. He is a trooper compared to a lot of kids though.
What part of Colorado did you live in? I lived in the Springs, didn't do as much hiking as I wanted there, but I still got out to a few areas

A great hike is up to Diamond Fork/Fifth Water hot springs, up Spanish Fork canyon. Best to go while school is still going. Go on a week day. Spring and Fall are the best times, especially Fall. Beautiful setting. We generally go nude in the pools, unless there are young (high school or younger) kids. College or older, we just ask if they would be offended. They gladly say "no problem" and most often do the same. Google it. There's a lot of info.
60+ this Saturday. Who is up for a short/long hike? Fifth Water would be awesome to hit.
