Please note the following is posted in the NON lifestyle Just Talk section of forum.

I have 6 huge jicamas and 4 whole pineapples sitting on my kitchen counter mocking me cuz I have NO idea how to use all of them up or store them for future use. I am going to cut 2 of the pineapple and grill the slices this week which leaves me 2 more. And one of the jicamas is going to be a slaw from a recipe I saw on allrecipes.com, which leaves 5 more.

Ideas? Tips? Want some? Help.
do a pineapple salsa, its so good and can be frozen if you cant us it all now

Put it upside down in a shopping cart and walk up and down the street. That might get you something "cooking" for later. :)

My plans are to go to Dave's after he gets home from fishing. We talked about going to the m&g tonight in Ogden. Or we might rent a bunch of movies and not budge from the couch. LOL

I thought you two were going to m&g tonight....

Pineapple can be frozen for a good while, just cut it up and put it on a cookie sheet, once its frozen throw it in a freezer bag and you can pull some out whenever you're making smoothies, sweet n sour chicken, etc. It's also fabulous as a sorbet!!!

I did look up jicama. Im just afraid it will go bad before I can use it. :(

we most likely are. we're going to hit up Macools in ogden and prob stop by after.

Actually, Jicima will last a while in a cool dry storage place. Since it's a root vegetable don't wrap it up, it will spoil quickly that way. It's great to chop up and toss in salad, put in salsa, I also make a slaw with it that takes one large Jicima, peeled and grated; 6 granny smith apples, also peeled and grated; toss with Marzetties slaw dressing; add chopped dates, cilantro and chopped cooked bacon and chopped roasted almonds....delicious :)

That sounds YUMMY! Think I will have to try this one out. And thanks for the tip to store the jicama. I was wondering how long it would keep if I put it in my root veggie bin. :D
Just remember cool and dry and you'll be good for a while :)
Lay the pineapple out after slicing and powder coat it with a paprika, cinnamon , and chili powder (1:1:5 ratio). Freeze and use as a frozen treat or chop up and eat over other treats.

Had to look up jicama, sounds interesting but no idea what to do with it.
